Happy Healthy Humpday!

Spring has already sprung, and summer is fast approaching. As much as we all love swapping our closets out for new clothes, we love feeling good in them even more. That means we need to start cutting out the junk food, using our running shoes a little more, and start eating (& even cooking!) healthier.

Here are some quick & healthy snacks and meals for you to try at home!

For an appetizer:
IMG_3633If you need a little something to munch on or something to tie over hungry guests while you finish up cooking, this is delicious! Grab a box of low fat & gluten free crackers and top with some goat cheese and jelly. We love this Kudzu Blossom Jelly from Chicory Market in Oxford! This is the perfect balance between sweet and salty! This is so much more filling and better for us than crunching on greasy potato chips and dip.

For dinner:

Before I even get to the recipe, you NEED an Instant Pot– it will change your life. With an Instant Pot, you can steam, slow cook, cook rice, make yogurt, and so so much more!IMG_3700

If you need something a little more hearty (& can’t totally cut out pasta… bc yum) try our Broccoli Pasta!

Put enough Extra Virgin Olive Oil to barely cover the base of your pan on the stove.

Then add in uncooked pasta noodles into the pan and sauteé them.

Mince a clove of garlic and stir into your pasta.

Pour in 32oz. of low sodium chicken broth.

Cut up about two handfuls of broccoli and toss that into your pan.

Stir until your noodles and broccoli are cooked to preference.

Top with red pepper flakes!

For a healthy dessert option:

In a medium saucepan, combine:

1/2 cup peanut or almond butter

1/2 cup fat-free milk or almond milk

1/4 cup unsweetened cocoa powder

2 tablespoons butter or coconut oil

1/4 teaspoon kosher salt

3 cups quick-cooking oats

1/3 cup mashed banana

After everything is well mixed, scoop out spoonfuls of the mix onto parchment paper and let cool. Enjoy 🙂
